|Brown sugar||1⁄2 Cup (8 tbs)|
|Flour||1 Cup (16 tbs)|
|Syrup||1⁄2 Cup (8 tbs)|
|Baking powder||2 Teaspoon|
|Ground nutmeg||1⁄2 Teaspoon|
|Breadcrumbs||2 Cup (32 tbs)|
|Grated carrot||1⁄2 Cup (8 tbs)|
|Bicarbonate||1 Teaspoon (dissolved in 1/2-cup warm water)|
|Chopped mixed candied peel||4 Ounce|
|Coffee essence/Instant coffeee||1 Teaspoon|
Wash fruit and dry well.
Beat butter, sugar and syrup well together.
Add breadcrumbs, carrots, spices and salt.
Add Bi-carb. water and flour.
Mix in the fruit and add a little milk if the mixture is too stiff.
Place into a greased pudding mould, cover with greaseproof paper and tie over a clean cloth.
Steam for 3 hours.
Keep in refrigerator until required.
Then steam again for 2 hours before serving.
