Treacle Layer Pudding
|Baking powder||1⁄2 Teaspoon|
|Lemon rind||1⁄2 Teaspoon|
Sieve the flour, baking powder, salt and the butter and mix well.
Add enough milk to make a firm, rather dry, dough.
Divide the dough in half and roll out one-half to line a basin.
Cut off enough from the remaining half to make the lid, then roll out the rest thinly.
Put some treacle in the bowl with a sprinkling of breadcrumbs and grated lemon rind.
Cut out a round of dough large enough to cover the treacle.
Moisten the edge and join onto the paste lining in the bowl.
Continue until the basin is full, finishing with the lid.
Cover with double greased paper, and then the pudding cloth.
Steam for 21/2 — 3 hours.
