Steamed Fruit Pudding
|Plain flour||1 Cup (16 tbs)|
|Soda bicarbonate||1 Teaspoon|
|Milk||2⁄3 Cup (10.67 tbs)|
|Raspberry jam||1 Tablespoon|
|Mixed fruits||3⁄4 Cup (12 tbs)|
|Chopped glace cherries||2 Tablespoon|
|Grated lemon rind||1 Teaspoon|
|Grated orange rind||1 Teaspoon|
|Vanilla essence||2 Drop (few drops)|
Cream butter with sugar, rinds and vanilla.
Add jam, fruit and cherries.
Sift flour and salt and add alternately with milk, in which soda has been dissolved.
Pour into mould.
Cover with greaseproof paper and steam for 2 hours.
When steaming in small moulds, steam for 1 — 1 1/4-hours.
