Apple And Raisin Pudding
Boil the rice in the water until nearly done, but not too soft, strain and add a pinch of salt and a nut of butter while the rice is still hot, stirring well.
Peel and core the apples and cut into small pieces.
Clean and stone raisins and mix with the apples.
Butter a pie dish, put in alternate layers of rice and apples and raisins.
Sprinkle each fruit layer with sugar and finish with a layer of apples.
Dot with the butter and bake in a moderate oven for 3/4-hour.
