Iced Christmas Pudding
|Sweetened condensed milk||8 Ounce (small)|
|Whipping cream||1⁄2 Pint|
|Mixed spice||1 Teaspoon|
|Instant coffee||4 Teaspoon|
|Vanilla essence||1⁄2 Teaspoon|
|Orange peel||4 Tablespoon (3-4 dessertspoons)|
|Chopped citron||1 Ounce|
|Chopped candied peel||2 Ounce|
|Glace cherries||3 Ounce|
As quick freezing is essential, turn refrigerator to "freeze" 15 minutes before beginning.
Beat 1/4-pint of the cream, condensed milk, mixed spice, ground nutmeg and coffee together.
Pour into refrigerator tray and freeze.
When frozen, turn into a basin.
Whip the rest of the cream until just stiff and fold into mix- ture with chopped fruit, nuts and peel.
Flavour to taste with vanilla and orange juice.
Pour into pudding mould and freeze again.
