Steamed Apple Prune Pudding
|Soft butter/Margarine||3⁄4 Cup (12 tbs)|
|Packed light brown sugar||1⁄2 Cup (8 tbs)|
|Molasses||3⁄4 Cup (12 tbs)|
|Eggs||4 , separated|
|All purpose flour||1 Cup (16 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Chopped uncooked prunes||1 Cup (16 tbs)|
|Tart apple||1 Cup (16 tbs), chopped|
|Citron||3⁄4 Cup (12 tbs), diced|
|Hard sauce||1 Tablespoon|
Cream butter and sugar until light and fluffy; beat in molasses.
Add egg yolks, one at a time, beating after each addition.
Add sifted dry ingredients.
Stir in fruits.
Then fold in stiffly beaten egg whites.
Pack in greased 1 1/2 -quart pudding mold.
Cover and steam for 3 hours, or until done.
Serve warm with hard sauce.
