Cinnamon Brown Rice Pudding
|Cooked medium grain brown rice||3⁄4 Cup (12 tbs)|
|Low carb whole milk dairy beverage||1 1⁄2 Cup (24 tbs)|
|Granulated sugar substitute||2 Teaspoon|
|Vanilla extract||2 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Sugar free pancake syrup||2 Tablespoon|
|Sliced strawberries||1⁄4 Cup (4 tbs)|
1. Combine rice, dairy beverage, sugar substitute, eggs, vanilla, and cinnamon in a medium saucepan. Cook, stirring constantly, over medium heat until mixture comes to a low boil.
2. Continue to cook, stirring often, until pudding thickens, about 8 minutes. Remove from heat and stir in syrup. Serve hot or cold topped with strawberries, if desired.
