Cinnamon Brown Rice Pudding

Ingredients
  Cooked medium grain brown rice 3⁄4 Cup (12 tbs)
  Low carb whole milk dairy beverage 1 1⁄2 Cup (24 tbs)
  Granulated sugar substitute 2 Teaspoon
  Eggs 2 Large
  Vanilla extract 2 Teaspoon
  Ground cinnamon 1 Teaspoon
  Sugar free pancake syrup 2 Tablespoon
  Sliced strawberries 1⁄4 Cup (4 tbs)
Directions

1. Combine rice, dairy beverage, sugar substitute, eggs, vanilla, and cinnamon in a medium saucepan. Cook, stirring constantly, over medium heat until mixture comes to a low boil.
2. Continue to cook, stirring often, until pudding thickens, about 8 minutes. Remove from heat and stir in syrup. Serve hot or cold topped with strawberries, if desired.
