Ice Cream Pudding Loaf
|Sugar||3⁄4 Cup (12 tbs)|
|Baking powder||1 1⁄4 Teaspoon|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Finely chopped peeled apple||1⁄2 Cup (8 tbs)|
Beat egg, add sugar gradually, beat well.
Sift flour, baking powder and salt.
Blend with egg and sugar mixture.
Stir in vanilla, add nuts and apple, mix well.
Pour into buttered 9" pie plate.
Bake at 350 degrees for 20 minutes.
Take loaf pan, line with waxed paper.
Slice 1 pt.ice cream for first layer.
Add pudding mixture over ice cream for second layer.
Add another pt.ice cream for third layer.
Slice for serving.
I use coffee ice cream (2 pts.) but any flavor may be used.
