Peach and Rice Pudding
|Cooked rice||1 Cup (16 tbs)|
|Milk||2⁄3 Cup (10.67 tbs)|
|Brown sugar||1⁄4 Cup (4 tbs)|
|Soft butter||1 Teaspoon|
|Pure vanilla extract||1 Teaspoon|
|Eggs||2 , beaten|
|Fresh peaches||2 , chopped coarsely (Peeled, Pitted)|
In a 2 quart (2 L) microproof casserole combine all ingredients.
Cook at power level 5 for 9 minutes, stirring twice.
Let stand at least 10 minutes if dessert is to be served warm.
Cool, then refrigerate if it will be served chilled.
Garnish with fresh peach slices and sprig of mint or sprinkle with nutmeg.
