Frozen Christmas Puddings
|Macaroon crumbs/Vanilla wafer crumbs||1 1⁄2 Cup (24 tbs)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Chopped dates||1⁄2 Cup (8 tbs)|
|Chopped candied fruit peel||1⁄2 Cup (8 tbs)|
|Grated lemon rind||1⁄2 Tablespoon (Rind Of 1/2 Lemon)|
|Marshmallows||8 , quartered|
|Hot orange juice||1⁄4 Cup (4 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Heavy cream||1 Cup (16 tbs), whipped|
Combine crumbs, nuts, fruit, rind and spices.
Dissolve marshmallows in orange juice, add sugar and combine with first mixture.
Fold in whipped cream.
Fill individual paper souffle cups with mixture, place in refrigerator tray and freeze until firm.
Remove paper cups and garnish puddings with holly sprays made of red cinnamon candies and bits of green gum drops.
Makes 10 puddings.
