Steamed Carrot Pudding

|Coarse dry bread crumbs||1 Cup (16 tbs)|
|Firmly packed light brown sugar||1 Cup (16 tbs)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Baking powder||1 Teaspoon|
|Baking soda||1 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Ground allspice||1⁄2 Teaspoon|
|Ground nutmeg||1⁄2 Teaspoon|
|Diced candied orange peel||1⁄2 Cup (8 tbs)|
|Golden raisins||1 Cup (16 tbs)|
|Grated pared carrot||1 Cup (16 tbs)|
|Potato||1 Cup (16 tbs), peeled, grated|
|Chopped peeled tart apple||1 Cup (16 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
Combine all ingredients in order given; mix well.
Pack into greased 1 1/2-quart pudding mold.
Cover and steam for 4 hours, or until done.
Serve warm, topped with hard sauce and a few strips of candied orange peel, if desired.
Makes 8 to 10 servings.
