Steamed Pudding

Ingredients
  Applesauce 1 Cup (16 tbs)
  Eggs/1/2 cup fat-free egg substitute 2
  Honey 1⁄2 Cup (8 tbs)
  Canola oil 1⁄2 Cup (8 tbs)
  Apple juice/Orange juice 2 Tablespoon
  Vanilla 1 Teaspoon
  Lemon juice 1 Teaspoon
  Grated lemon rind 1⁄4 Teaspoon
  Whole wheat pastry flour 1 Cup (16 tbs)
  Ground cinnamon 1 Teaspoon
  Baking soda 2 Teaspoon
  Ground allspice 1⁄4 Teaspoon
  Finely chopped dates/Finely chopped raisins 1 Cup (16 tbs)
  Chopped nuts 1⁄2 Cup (8 tbs)
Directions

In a large bowl, combine the applesauce, eggs, honey, oil, apple juice or orange juice, vanilla, lemon juice, and lemon rind.
Stir in the flour, cinnamon, soda, and allspice.
Fold in the dates or raisins and nuts.
Coat a 6-cup ring mold with no-stick spray.
Add the batter and cover with wax paper.
Microwave on medium (50% power) for a total of 50 minutes, rotating the dish a quarter turn every 10 minutes during this time.
Cover with wax paper and microwave on high for 3 minutes.
Cover tightly with foil and let stand for 15 minutes.
Unmold onto a plate.
Serve warm.
