|Hot water/Tea||1 1⁄2 Cup (24 tbs)|
|Dried prunes||8 (Medium Variety)|
|Enriched white bread slice||2 , cubed|
|Grated lemon rind||1⁄2 Teaspoon|
|Lemon juice||1⁄2 Teaspoon|
Combine water or tea and prunes in a small saucepan.
Cook prunes, uncovered, until fruit is very soft.
Remove and discard pits.
Place fruit and liquid in blender container with bread, eggs, lemon rind, and juice.
Process until smooth.
Divide evenly into 2 individual ovenproof serving dishes and bake 30 minutes at 350°F.
