Old Fashioned Rice Pudding
|Evaporated milk||12 Ounce (1 Can)|
|Milk||1⁄4 Cup (4 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Raisins||1⁄3 Cup (5.33 tbs)|
|Eggs||2 , beaten|
|Cooked rice||4 Cup (64 tbs)|
In 4-cup measure, combine evaporated milk, milk and butter.
Microwave at High for 2 1/2 minutes.
In 2-quart casserole, combine sugar, raisins, eggs, salt and vanilla.
Blend hot milk mixture slowly into egg mixture.
Stir in rice.
Microwave at High for 3 minutes.
Reduce power to 50% (Medium).
Microwave for 8 to 15 minutes, or until mixture thickens, stirring 2 or 3 times.
