Holiday Carrot Pudding

Ingredients
  All purpose flour 1 1⁄4 Cup (20 tbs), sifted
  Baking powder 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Ground nutmeg 1⁄2 Teaspoon
  Eggs 2
  Shortening 1⁄2 Cup (8 tbs)
  Brown sugar 3⁄4 Cup (12 tbs)
  Apple 1 Medium, peeled, cut in eighths, and cored
  Carrots 2 Medium, sliced
  Potato 1 , peeled and cut in pieces
  Raisins 3⁄4 Cup (12 tbs)
  Brandy hard sauce 1 Tablespoon
Directions

Sift together first 5 ingredients in mixing bowl.
Place eggs, shortening, and sugar in blender container; blend till smooth.
Add apple; blend till finely chopped.
Add carrot slices; blend till coarsely chopped.
Add potato pieces; blend till finely chopped.
Add blender mixture and raisins to dry ingredients; mix well.
Spoon into greased and floured 4-cup mold.
Cover tightly.
Place on rack in deep kettle; add water 1-inch deep.
Cover kettle; steam for 2 1/2 hours.
Cool 10 to 15 minutes.
Unmold.
Serve with Brandy Hard Sauce.
