|Regular orange tapioca pudding mix||3 1⁄4 Ounce (1 Package)|
|Lemon juice||1 Tablespoon|
|Tiny marshmallows||1⁄2 Cup (8 tbs)|
|Sliced maraschino cherries||2 Tablespoon|
Drain peaches, reserving syrup; set 4 slices aside for garnish.
Dice remaining peaches.
Add milk to reserved peach syrup to equal 2 cups liquid.
In a 4-cup glass measure combine the dry pudding mix with the milk-syrup mixture.
Stir till pudding mix is dissolved.
Micro-cook, uncovered, 3 minutes; stir.
Micro-cook, uncovered, till thickened and bubbly, 3 to 4 minutes more, stirring every 30 seconds.
Stir in lemon juice; cool 45 minutes.
Fold diced peaches, marshmallows, and maraschino cherries into pudding; chill.
Spoon pudding into sherbet dishes; garnish with reserved peach slices.
