|Dried split peas||225 Gram|
|Dried egg powder||30 Milliliter|
|Caster sugar||2 Tablespoon|
|Chopped parsley||15 Milliliter|
1. Soak the peas in cold water for several hours or overnight. Drain, place in a saucepan, cover with fresh water and bring to the boil. Peel and slice the onion, add to the peas, cover the pan and simmer until the peas are tender, about 1 1/2 hours. Drain.
2. Place the peas and onion in a blender or food processor with the butter or margarine. Blend the dried egg and water to a smooth cream and add to the peas with a pinch of sugar and seasoning. Process until smooth. Turn into a dish and sprinkle with parsley. Serve with boiled ham, bacon or pickled pork.
