Coriander Rice Pudding
|Milk||4 Cup (64 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Uncooked rice||1⁄4 Cup (4 tbs)|
|Ground coriander seed||1 Teaspoon|
Put all ingredients in a 2-quart casserole and stir well.
Bake for 1 hour in preheated moderate oven (350°F.); reduce to slow (300°F.) and bake, stirring every half hour, until milk is absorbed.
This will be about 2 hours.
If you wish, scald the milk first and bake in slow oven (300°F.) for 2 hours.
Raisins may be added if desired.
