Baked Prune Pudding
|Cracker crumbs||1⁄4 Cup (4 tbs) (about 4 crackers)|
|Baking powder||3⁄4 Teaspoon|
|Cooked prunes||1 Cup (16 tbs), seeded,drained and chopped|
|Chopped walnuts/Pecans||1⁄4 Cup (4 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Melted butter||1 Tablespoon|
|Grated lemon rind||1⁄4 Teaspoon|
Mix cracker crumbs thoroughly with the baking powder; then combine all ingredients thoroughly, and turn into a buttered glass baking dish (8 1/2 x 4 1/2 x1 3/4 inches).
Bake in a moderately slow oven (325° F.) for 45 minutes.
Pudding is still soft when done.
Serve hot with cream.
