Fluffy Tapioca Pudding
|Milk||2 Cup (32 tbs)|
|Eggs||2 Small, separated|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Quick cooking tapioca||2 Tablespoon|
In glass measuring cup combine milk, egg yolks, 1/4 cup sugar, tapioca, and salt; let stand 5 minutes.
Cook on HIGH (9) for 6 to 8 minutes or until mixture comes to full boil, stirring frequently.
Beat egg whites until soft peaks form.
Gradually, add remaining sugar; beat until sugar disappears.
Fold tapioca mixture into egg whites gently but thoroughly.
Spoon into serving dishes.
