Quick Tapioca Pudding

Ingredients
  Egg 1 , separated
  Milk 2 Cup (32 tbs)
  Quick cooking tapioca 3 Tablespoon
  Sugar 5 Tablespoon, divided
  Salt 1⁄4 Teaspoon
  Vanilla 1 Teaspoon
Directions

In 1 1/2-qt casserole, blend egg yolk, milk, tapioca, 3 tablespoons sugar and salt.
Let stand 5 minutes.
Beat egg white in small bowl until foamy, gradually adding 2 tablespoons sugar.
Beat until soft peaks form; set aside.
Stir tapioca mixture well.
Microwave at High 4 1/2 to 7 1/2 minutes, or until mixture comes to full boil, stirring after 3 minutes, then every minute.
Stir in vanilla.
Fold in egg white.
Let stand 15 minutes.
Serve warm or cold.
