Apple Rice Pudding
|Apple cider/Apple juice||1 Cup (16 tbs)|
|Chopped apple||3⁄4 Cup (12 tbs), peeled, if desired|
|Ground cinnamon||1 Dash|
|Minute rice||2⁄3 Cup (10.67 tbs)|
|Frozen whipped dessert topping||1 Cup (16 tbs), thawed|
|Ground nutmeg||1 Teaspoon|
In 1 1/2-quart casserole combine apple cider or apple juice, chopped apple, butter, sugar, salt, and ground cinnamon.
Micro-cook, covered, till mixture bubbles, about 3 1/2 minutes.
Stir in rice.
Cover and let stand for 5 minutes to absorb liquid; fluff mixture with a fork.
Place in the refrigerator to chill.
Just before serving, fold in whipped dessert topping.
Spoon into dessert dishes.
Sprinkle with ground nutmeg.
