Apple Rice Pudding

  Apple cider/Apple juice 1 Cup (16 tbs)
  Chopped apple 3⁄4 Cup (12 tbs), peeled, if desired
  Butter/Margarine 1 Tablespoon
  Sugar 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Ground cinnamon 1 Dash
  Minute rice 2⁄3 Cup (10.67 tbs)
  Frozen whipped dessert topping 1 Cup (16 tbs), thawed
  Ground nutmeg 1 Teaspoon

In 1 1/2-quart casserole combine apple cider or apple juice, chopped apple, butter, sugar, salt, and ground cinnamon.
Micro-cook, covered, till mixture bubbles, about 3 1/2 minutes.
Stir in rice.
Cover and let stand for 5 minutes to absorb liquid; fluff mixture with a fork.
Place in the refrigerator to chill.
Just before serving, fold in whipped dessert topping.
Spoon into dessert dishes.
Sprinkle with ground nutmeg.
