Low Fat Chocolate Pudding
|Sugar||1⁄2 Cup (8 tbs)|
|Unsweetened cocoa powder||1⁄4 Cup (4 tbs)|
|Skim milk||2 1⁄2 Cup (40 tbs)|
|Vanilla||1 1⁄2 Teaspoon|
In a heavy medium saucepan combine the sugar, unsweetened cocoa powder, cornstarch, and salt.
Stir in the milk. Cook and stir over medium heat till thickened and bubbly. Cook and stir for 2 minutes more. Remove from the heat. Stir in vanilla. Pour the pudding into a bowl. Cover the surface with clear plastic wrap. Chill thoroughly; do not stir.
