Heavenly Rice Pudding
|Raw white rice||1⁄2 Cup (8 tbs)|
|Canned pineapple tidbits||8 3⁄4 Ounce (1 Can)|
|Miniature marshmallows||1 Cup (16 tbs)|
|Maraschino cherries||10 , halved|
|Whipped topping mix||2 1⁄8 Ounce (1 Package)|
|Cold milk||1⁄2 Cup (8 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Maraschino cherry juice||2 Tablespoon|
Cook rice as package label directs for softer rice.
Refrigerate until well chilled.
Drain pineapple, reserving syrup.
In large bowl, combine chilled rice, drained pineapple, marshmallows and cherries; stir until well combined.
Refrigerate, covered overnight with the pineapple syrup stored separately.
Next day, prepare whipped topping mix with milk and vanilla as package label directs.
Stir reserved pineapple syrup and the cherry juice into rice mixture.
Fold in whipped topping just until combined.
Refrigerate about one hour before serving.
