Indian Carrot And Tofu Pudding

This tasty tofu pudding is a nice twist to the traditional Indian dessert –the carrot (Gajar) halwa. This recipe is nice and healthy and just right for me when I am on a no milk diet.
  Carrots 500 Gram, grated
  Silken tofu 12 Ounce
  Roasted cashews 1⁄2 Cup (8 tbs), powdered
  Milk 1⁄2 Cup (8 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Orange essence 1⁄4 Teaspoon

Cover and steam cook the grated carrots. In the blender, blend together the tofu, powdered cashews and the milk. Add this to the carrots when they are about half done. Mix well. Add the sugar(you can adjust the quantity depending on your specific preferences). Cover and cook for approximately half an hour. Add the orange essence (you could even try the rose essence if you like). Mix well. Serve in orange cups.
