Lemon Delicious Pudding
|Butter||1 Teaspoon (For Greasing)|
|Caster sugar||3 Ounce (90 Gram)|
|Lemon||1 Large (Use Grated Rind And Juice)|
|Eggs||2 , separated|
|Self raising flour||1 Ounce (30 Gram)|
|Milk||6 Fluid Ounce (185 Milliliter)|
1. Preheat oven to 180°C (350°F/ Gas 4). Grease a 1 litre (1 3/4 pt) souffle dish. Cream butter with sugar and lemon rind until pale and fluffy. Stir in egg yolks, flour and lemon juice. Gradually stir in milk.
2. Whisk egg whites until stiff. Fold into lemon mixture, spoon mixture into prepared dish and place dish in a roasting tin half filled with boiling water. Bake for 45 minutes until sponge topping is golden.
