Steamed Blueberry Pudding
|Shortening||1⁄2 Cup (8 tbs)|
|Granulated sugar||1 Cup (16 tbs)|
|Eggs||2 , beaten|
|Sifted cake flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||3 1⁄2 Teaspoon|
|Bottled milk/1/2 cup evaporated milk and 1/2 cup water mixed together||1 Cup (16 tbs)|
|Blueberries||2 Cup (32 tbs) (Cleaned Blueberries)|
|Hard sauce||1 Cup (16 tbs)|
Work the shortening with a spoon until fluffy and creamy.
Then add the sugar gradually while continuing to work with a spoon until light.
Add the eggs and beat with a spoon until light and fluffy.
Sift together the 2 1/2 c flour, baking powder, and salt and add to the shortening mixture alternately with the milk.
Fold in the blueberries which have been floured with the 3 tablesp of flour Turn into a greased or oiled and floured covered 1 1/2 at pudding mold and steam on top of the range for 1 hr as in General Directions.
Serve with Hard Sauce.
