Fruity Bread Pudding

Ingredients
  Mixed dried fruit 3 Ounce (75 Grams Or 2/3 Cups)
  Apple juice 1⁄4 Pint (150 Milliliter Or 2/3 Cup)
  Stale bread 4 Ounce, diced (115 Grams, Brown / White Bread)
  Mixed spice 1 Teaspoon
  Banana 1 Large, sliced
  Skimmed milk 1⁄4 Pint (150 Milliliter Or 2/3 Cup)
  Demerara sugar 15 Milliliter (1 Tablespoon)
  Natural low fat yogurt 2 Tablespoon (For Serving)
Directions

1. Preheat the oven to 200°C/400°F/ Gas 6. Place the dried fruit in a small pan with the apple juice and bring to the boil.
2. Remove the pan from the heat and stir in the bread, spice and banana Spoon the mixture into a shallow 1.2 litre / 2 pint / 5 cup ovenproof dish and pour over the milk.
3. Sprinkle with demerara sugar and bake for 25-30 minutes, until firm and golden brown. Serve hot or cold with natural yogurt.
