Bread And Peach Pudding

Ingredients
  Bread slices 4 , cut into cubes (1/2 Inch Thick Hand Cut Pieces, Whole Wheat Bread Or Oat Bread)
  Diced peaches 1 Cup (16 tbs)
  Sultanas/Currants 1⁄2 Cup (8 tbs)
  No added sugar apple juice 2 Tablespoon
  Egg whites 2
  Low fat milk 2 Cup (32 tbs)
  Vanilla essence 1 Teaspoon
  Artificial sweetener 1 Tablespoon
  Ground cinnamon 1 Teaspoon
Directions

1. Preheat oven to 180°C / 360°F / Gas 4. Lightly spray or brush a large ovenproof baking dish with unsaturated oil.
2. Place bread cubes, peaches and sultanas in baking dish. Toss to combine. Spread out evenly over base of dish. Sprinkle with juice. Set aside.
3. Place egg whites, milk, vanilla essence and 1 tablespoon sweetener in a bowl. Whisk to combine. Pour over bread mixture. Sprinkle with cinnamon.
4. Bake for 35 minutes or until top is golden. If necessary, cover pudding and cook for 10 minutes longer or until set when tested with a knife.
