Spiced Steamed Chocolate Pudding
|All purpose flour||3⁄4 Cup (12 tbs)|
|Baking powder||2 Teaspoon|
|Unsweetened chocolate squares||1 1⁄2|
|Eggs||3 , separated|
|Sugar||3⁄4 Cup (12 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Almonds||1⁄4 Cup (4 tbs), blanched|
Sift flour, measure and resift 3 times with baking powder, salt and spices.
Melt chocolate and butter over hot water.
Beat egg yolks until light and foamy; add sugar and continue beating with rotary beater until fluffy.
Add chocolate and butter and blend.
Add dry ingredients and milk alternately, beginning and ending with flour and mixing well after each addition.
Stir in vanilla.
Fold in stiffly beaten egg whites and nuts and turn into well-greased mold (1 1/2 to 2 quarts) that can be covered tightly.
Steam in a covered steamer for 1 1/2 hours.
(Used, empty metal baking powder cans may be used for steaming pudding.) Serve hot with Coffee Sauce.
