Steamed Christmas Fig Pudding
|Chopped dried figs||3⁄4 Pound (2 1/3 Cups, Whole Figs)|
|Milk/3/4 cup evaporated milk and 3/4 cup water||1 1⁄2 Cup (24 tbs) (Bottled Milk)|
|Suet||1 1⁄3 Cup (21.33 tbs), ground fine|
|Soft bread crumbs||1 1⁄2 Cup (24 tbs)|
|Eggs||3 , well-beaten|
|Sifted all purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||2 1⁄4 Teaspoon|
|Granulated sugar||1 Cup (16 tbs)|
|Grated orange rind||3 Tablespoon|
Cook the figs with the milk in a double boiler for 20 min.
Combine the suet, bread crumbs, and eggs.
Add the cooked fig mixture with the sifted dry ingredients and the orange rind, and mix well.
Pour into a 2 qt greased or oiled, covered pudding mold.
Steam on top of the range for 2 hrs as in.
General Directions Serve with Hard Sauce, Ice Cream Sauce, or Vanilla Sauce.
