Rich Orange Marmalade Pudding

Ingredients
  Orange marmalade 1⁄3 Cup (5.33 tbs)
  Flour 3⁄4 Cup (12 tbs)
  Salt 1 Pinch
  Baking powder 1 Teaspoon
  Breadcrumbs 1 Cup (16 tbs)
  Shredded suet 2⁄3 Cup (10.67 tbs)
  Lemon 1 , rind grated finely
  Sugar 1⁄4 Cup (4 tbs)
  Eggs 2 , beaten
  Milk 2⁄3 Cup (10.67 tbs)
Directions

This is an easy pudding to make and you can vary it by using different marmalades - lemon, grapefruit, lime or ginger.
Serve it with a matching Marmalade Sauce.
Grease a 4 cup pudding basin.
Spread 1 tablespoon marmalade over the bottom.
Prepare a steamer.
Sift together the flour, salt and baking powder.
Mix in the breadcrumbs, suet, lemon rind and sugar.
Stir in remaining marmalade and eggs and sufficient milk to give a soft dropping consistency.
Turn into the basin, cover with greased foil and tie down tightly.
Steam for 1 1/2—2 hours.
Remove from steamer and allow to shrink slightly before turning out.
