Right Away Rice Pudding
|Water||2 Cup (32 tbs)|
|Rice||1 Cup (16 tbs), uncooked|
|Raisins||1 Cup (16 tbs)|
|Firmly packed light brown sugar||1⁄4 Cup (4 tbs)|
|Walnuts||1 Cup (16 tbs), chopped|
|Sour cream||1 Cup (16 tbs)|
|Ground cinnamon||1⁄4 Teaspoon|
|Lemon juice||2 Teaspoon|
1. Bring the salt and water to a boil in a 2-quart saucepan. Add the rice, stir once, reduce the heat, cover, and simmer for 18 to 20 minutes, or until all the water has been absorbed.
2. Meanwhile, in a mixing bowl, combine the raisins, sugar, walnuts, sour cream, cinnamon, and lemon juice. Add the warm rice, stir to mix, and serve warm or cold.
