Apple Brandy Pudding
|Sour cream coffee cake||1⁄2 , baked and coarsely crumbled|
|Apple pie filling||21 Ounce (1 Can)|
|Brandy||1 Cup (16 tbs)|
|Hot water||1 Cup (16 tbs)|
Preheat oven to 300°.
Using entire 2 Tablespoons of butter, grease a casserole that measures 8" round by 3" deep.
Into the greased casserole, place alternate layers of cake crumbs and pie filling, beginning and ending with cake crumbs.
Pour brandy and water over all.
Cover with lid or foil and bake at 300° for at least 90 minutes.
The low temperature and slow baking develops the flavor.
The exact baking time is not really important.
The pudding can be held for several hours by reducing the temperature to 250° and replenishing the liquids as they evaporate.
Serve hot with vanilla ice cream or freshly whipped cream.
