Rich Chocolate Pudding
|Semi-sweet chocolate||3 Ounce|
|Milk||1 1⁄4 Cup (20 tbs)|
|Vanilla extract||1⁄4 Teaspoon|
|Eggs||2 , separated|
|Fresh white breadcrumbs||2 1⁄2 Cup (40 tbs)|
Put the chocolate and butter in a bowl over a saucepan of hot water until melted.
Remove from heat and stir until smooth.
Warm the milk and add it gradually.
Stir in the sugar.
Add vanilla to the beaten egg yolks and stir into the chocolate.
Mix in breadcrumbs.
Beat the egg whites until stiff but not brittle and fold into the mixture.
Turn into a well-greased 4 cup pudding mold.
Cover closely with greased foil and steam for 1 1/2-2 hours until well risen and springy to the touch.
Allow to shrink before unmolding.
Serve hot with Chocolate Sauce or cold with plain whipped cream.
