Apple Crumb Pudding
|Butter/Margarine||1⁄3 Cup (5.33 tbs)|
|Bread crumbs||2 Cup (32 tbs) (toasted)|
|Egg||3 , separated|
|Cinnamon||1⁄2 Teaspoon, ground|
|Sugar||2⁄3 Cup (10.67 tbs) (divided)|
|Cream of tartar||1⁄8 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
Microwave butter in a 2-quart glass casserole at HIGH 1 minute.
Combine butter, applesauce, bread crumbs, beaten egg yolks, cinnamon, and 1/3 cup sugar.
Cover with waxed paper.
Microwave at HIGH 10 minutes.
Stir after 5 minutes.
Beat egg whites until foamy.
Add salt and cream of tartar.
When soft peak stage is reached, slowly beat in remaining sugar and vanilla.
Beat until stiff.
Meringue should be glossy not dry.
Spread meringue over pudding in casserole.
Microwave at HIGH 2 minutes and 45 seconds.
Rotate dish 1/2 turn after 1 minute.
