Santre Ka Caramel Pudding
|Sugar||1 Cup (16 tbs)|
|Eggs||5 , separated|
|Baking powder||1⁄2 Teaspoon|
|Butter||1 1⁄2 Tablespoon|
|Flour||1⁄2 Cup (8 tbs)|
|Orange juice||1 Cup (16 tbs)|
In a pan, heat 1/3 of the sugar with 1/3 cup water till it turns brown.
Pour into a baking dish and reserve.
Mix the butter and remaining sugar.
Add one yolk at a time and beat till smooth.
Add sieved flour and the baking powder and orange juice.
Beat the egg whites stiffly and fold in gently into the flour mixture.
Spoon over the caramel.
Put the whole baking dish in a pan of hot water and bake in a moderate oven for 50 minutes, or till golden and done.
Serve warm with cream.
