Cinnamon Rice Pudding
|Short grain rice||1⁄2 Cup (8 tbs)|
|Milk||4 Cup (64 tbs)|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|Sweet butter||2 Tablespoon|
|Raisins||1⁄2 Cup (8 tbs)|
|Granulated sugar||1 Tablespoon|
1. In a sauce of salted boiling water, boil rice 10 minutes. Drain.
2. In a large enamel pot, combine partially cooked rice, milk, sugar, butter and salt. Simmer, uncovered, stirring occasionally for about 1 hour or until milk is absorbed. Stir in raisins.
3. Transfer to a glass bowl. Sprinkle with cinnamon and sugar to coat top.
4. Cool and refrigerate until ready to serve.
