Christmas Mixed Fruit Pudding
|Currants||4 Ounce (125 gram)|
|Raisins||8 Ounce (225 gram)|
|Sultanas||8 Ounce (225 gram)|
|Chopped mixed peel||4 Ounce (125 gram)|
|Ale||3 Fluid Ounce (75 milliliter)|
|Lemon||1 (use grated rind and juice)|
|Butter||6 Ounce (175 gram)|
|Brown sugar||8 Ounce (225 gram)|
|Fresh breadcrumbs||8 Ounce (225 gram)|
|Ground mixed spice||10 Milliliter|
|Grated nutmeg||1 Teaspoon|
Mix the fruit, ale and lemon juice and rind together.
Cover and leave overnight.
Cream the butter and sugar together until fluffy.
Beat in the eggs, then add all the remaining ingredients and mix well.
Put in the centre of a floured pudding cloth and tie securely, allowing room for expansion.
Put into a large pan half-filled with hot water and boil the pudding for 4 hours.
