Baked Vanilla Pudding

Ingredients
  Sugar 1⁄3 Cup (5.33 tbs)
  Salt 1⁄4 Teaspoon
  Cornstarch 3 Tablespoon
  Milk 2 Cup (32 tbs)
  Egg 1 , separated
  Vanilla extract 1⁄2 Teaspoon
Directions

1. Combine sugar, salt and cornstarch in a 1-quart glass casserole. Add milk gradually and blend well. Cook uncovered in microwave oven 6 to 8 minutes at BAKE; stir often.
2. Beat egg yolk and stir a little of hot mixture into yolk. Return to casserole. Cook uncovered in microwave oven 1 to 1 1/2 minutes at BAKE, or until mixture coats a metal spoon; do not leave spoon in mixture.
3. Beat egg white until stiff and fold into hot mixture, gently but thoroughly. Mix in vanilla extract. Pour into individual serving dishes or a large bowl to cool.
