Heat the milk, and infuse the flavouring for about 10 min., then remove it.
Sprinkle the grain into the flavoured milk, stirring quickly to prevent lumps forming.
Continue stirring until the mixture has simmered long enough for the grain to become transparent and cooked through—about 15 min Leave to cool slightly.
Separate the eggs and stir in the egg yolks.
Add the sugar and flavouring essence (if used), and lastly stir the stiffly-beaten egg whites into the pudding.
Pour into a well-buttered pie-dish and bake in a warm oven (335° F., Gas 3) until the top is nicely brown—about 30-40 min.
