Whipped Farina Pudding
|Apricot nectar||2 Cup (32 tbs)|
|Farina/Cream of wheat||1⁄4 Cup (4 tbs)|
|Sugar/Honey||2 Tablespoon (To Taste)|
Bring nectar to a boil.
Stir in farina.
Reduce heat and cook about 3 minutes, stirring occasionally.
Remove from heat, transfer to small bowl of an electric mixer.
Beat at high speed about 10 minutes, or until mixture is doubled in volume.
Sweeten to taste.
Top each serving with an apricot half.
Serve within 6 hours or pudding loses volume.
