Large Grain Puddings
|Sago||1 Ounce (Large Ones)|
|Rice||1 Ounce (Whole Ones, Carolina / Short Grain)|
|Flaked tapioca||1 Ounce (Null)|
|Flaked rice||1 Ounce (Null)|
|Milk/Null||2 Pint (Null)|
|Sugar/Null||3 Ounce (Null)|
|Finely shredded suet/Butter||1⁄2 Ounce (Null)|
|Grated nutmeg/Other flavoring||1 Teaspoon (Null)|
Grease a pie-dish with butter.
Wash the grain in cold water if necessary, and put it into the pie-dish with the milk.
Leave to stand for about 1/2 hr.
Add the sugar, flake the fat on to the top and add any flavouring required.
Bake slowly (310° F., Gas 2) until the pudding is brown on top and of a thick creamy consistency.
