Elderberry Rice Pudding

Ingredients
  Rice 2 Cup (32 tbs), cooked
  Milk 1 1⁄2 Cup (24 tbs)
  Salt 1 Dash
  Granulated sugar 3 1⁄2 Tablespoon
  Margarine 1 Tablespoon
  Vanilla 1 Teaspoon
  Eggs 2
  Dried elderberries 1⁄2 Cup (8 tbs)
  Lemon rind 1⁄2 Teaspoon, grated
  Lemon juice 1 Teaspoon
Directions

Combine rice, milk, salt, sugar, margarine, vanilla and eggs.
Mix well.
Stir in elderberries, rind and juice.
Pour into lightly greased baking pan.
Bake at 325°F.for 1 1/2 hours.
