New Year Pudding

Ingredients
  Breadcrumbs 6 Cup (96 tbs), fresh breadcrumbs (fresh)
  Salt 1 Teaspoon
  Ground cinnamon 1 1⁄2 Teaspoon
  Ground nutmeg 1 1⁄2 Teaspoon
  Mixed spice 1 Teaspoon
  Brown sugar 1 1⁄2 Cup (24 tbs)
  Milk 1 1⁄4 Cup (20 tbs)
  Eggs 12 Small, beaten
  Vegetable shortening 1 1⁄4 Cup (20 tbs)
  Apples 1 Cup (16 tbs), chopped
  Seedless raisins 3 1⁄4 Cup (52 tbs), chopped
  Currants 1 Cup (16 tbs), chopped
  Dates 1⁄2 Cup (8 tbs), chopped
  Peel 1⁄2 Cup (8 tbs), candied
  Cherries 1⁄2 Cup (8 tbs), quartered
  Brandy 4 Tablespoon
Directions

Mix the breadcrumbs, salt, spices and sugar together in a large mixing bowl.
Heat the milk in a small saucepan and pour it over the dry ingredients.
Mix well and allow to cool.
Crumble the vegetable shortening into the bread crumb mixture, add the beaten eggs and stir the mixture very well.
Add all the fruit and the brandy to the pudding mix and stir very well.
Turn the mixture into two 1 quart pudding steamers and cover with baking foil.
Place each steamer in a pan with 2 inches of water and steam for 4-6 hours.
Add more water if necessary.
