Pineapple Pudding

Ingredients
  Chopped pineapple 1 Cup (16 tbs)
  Sooji 1 Cup (16 tbs)
  Cashews 1 Tablespoon, cut into pieces
  Raisins 1 Tablespoon
  Water 2 1⁄2 Cup (40 tbs)
  Melted ghee/Clarified butter 3 Tablespoon
  Sugar 2 Tablespoon
  Cardamom powder 1⁄4 Teaspoon
  Yellow colour 1 Pinch
Directions

First heat a pan, add pineapple pieces and 2 tbsp sugar. Mix it well and cook till pineapple are tender.

Heat ghee in a pan and fry raisins and cashews and keep aside.

In the same pan fry sooji till the raw smell has gone.

Now add boiling water and pineapple pieces and mix it well. Cover and keep till all the water evaporates.

Now add the sugar, fried cashew and raisins. Mix well.

Cover and cook on a low flame till its dry. Now sprinkle cardamom powder and mix it well.

Serve hot.

Do we need to mash the pineapple pieces or cook them until they become really tender?

No...we need not mash the pineapple...they will cook very quickly...

Is it like pineapple Sheera?

Also, do you think saffron could be added in this dessert?

I am not aware of pineapple sheera..We use saffron for plain sheera and not for pudding...

ya anjali ,i also had same kind of pudding(sheera) at one of my freind place ,she called it as pineaple keasri (sheera),the only thing was it was fully loaded with ghee.
