Rice Date Pudding

Ingredients
  Skim milk 2 Cup (32 tbs)
  Dates 1⁄2 Cup (8 tbs), snipped (pitted)
  Long grain rice 1⁄4 Cup (4 tbs) (uncooked)
  Salt 1⁄4 Teaspoon
Directions

1. Preheat oven to 350° F.
2. Combine skim milk, dates, rice and salt in 3-cup ovenproof mold, baking dish or small casserole.
3. Bake for 1 to 1 1/4 hours, until thickened and creamy; stir three or four times during cooking period.
