Lemon Pudding Cookies
|Bisquick mix||1 Cup (16 tbs)|
|Instant lemon pudding mix||12 Ounce (Three 4 Ounce Packages)|
|Egg||1 Large, beaten|
|Applesauce||1⁄4 Cup (4 tbs)|
|Sugar||1 Tablespoon (For Topping)|
Preheat oven to 350 degrees.
Grease two large cookie sheets or line each with parchment paper.
Mix first four ingredients in a large bowl until dough forms.
Put a few tablespoons of sugar in a small bowl for the topping.
Roll dough into 1" balls, then roll each one in the sugar.
Place them two inches apart on the cookie sheets.
Press each cookie with the bottom of a glass to flatten to 1/4-inch thick.
Repeat for all the cookies.
Bake until just golden brown on the edges, about 10 minutes.
Transfer to a cooling rack and cool completely.
