Microwave Vanilla Pudding
|Skim milk||2 Cup (32 tbs)|
|Egg/Equivalent egg substitute||1 Large|
|Sugar substitute||3 Teaspoon (2 Packages)|
Put the sugar and cornstarch in a 4 cup (1 L) glass mixing bowl.
Mix in the skim milk.
Cook on high in the microwave for 5-7 minutes.
Stop a few times to stir during the process.
The mixture will be smooth and thick.
Beat the egg in a small bowl.
Mix in a few spoonfuls of the hot milk mixture.
Turn the egg mixture into the thickened milk.
Return to the microwave and cook on roast or medium for a minute or two.
Stop and stir during the process.
Remove from the microwave.
Stir in the butter, vanilla, and sugar substitute.
