Dried Fruit Pudding
|Butter||1 Cup (16 tbs), melted|
|Carob powder||1 Cup (16 tbs)|
|Pure vanilla extract||1 Teaspoon|
|Whole milk ricotta cheese||1 Pound|
|Chopped dates/Pecans, walnuts / coconut / 1/4 cup sesame seeds / sunflower seed kernels||1 Cup (16 tbs)|
1. Combine the butter, carob powder, and vanilla.
2. Put eggs in the container of an electric blender or food processor and blend or process until frothy.
3. Add the butter mixture and honey and blend or process until well mixed.
4. Add the ricotta and blend or process until smooth. Stir in one of the optional ingredients. Pour into a serving bowl and chill.
